Method :
For the batter: beat the eggs into a deep bowl, add yogurt, sugar, coconut flakes, vanilla sugar, and mix. Then I add flour with baking powder and knead the dough, the dough should be thick.
I prepare apples: peel and cut into rings, 1 cm thick, using a plastic bottle cap, remove the core.
For dusting, mix sugar and cinnamon.
I roll the finished apple rings in batter and fry in vegetable oil (temperature below medium) on both sides until golden brown for 2 minutes.
Place the finished apple fritters on a paper towel.
I sprinkle some of the pancakes with cinnamon sugar, grease some with honey sprinkle with almond flakes, and sprinkle the rest with powdered sugar.
