Method :
To prepare the crust, we need sugar cookies, I use “Yubileinoe traditional”.
Grind the cookies in a blender into fine crumbs.
Add 100 g of melted butter and mix.
I will assemble the cheesecake in a ring with a diameter of 20 cm.
We spread the prepared mass and distribute it evenly.
Place the mold in the refrigerator for 15-20 minutes.
Mix cottage cheese, sour cream, and sugar using an immersion blender.
Fill the gelatin with water and leave it to swell for 15 minutes.
Then dissolve the gelatin in a water bath or in the microwave.
If you dissolve gelatin in the microwave, do it in bursts for a few seconds.
Add the dissolved gelatin to the curd mass and mix well.
Take the mold with the cheesecake base out of the refrigerator and spread the curd mixture on top.
Place in the refrigerator for 1-2 hours.
To prepare the third layer we need oranges.
Squeeze the juice from the oranges; we need 200 ml of juice.
Pour 5g gelatin into 4 tbsp. juice and leave to swell.
Then dissolve the gelatin in a water bath or in the microwave.
Combine juice and dissolved gelatin.
Pour the last layer of orange juice onto the cheesecake and put it in the refrigerator until completely set, for 5-6 hours.
Decorate the finished cheesecake with melted chocolate and orange slices!
