There are many recipes for shrimp soups, each of which has its own characteristics and additional ingredients. In this article, I propose to share with you one such recipe, which is perfect for cold autumn or winter weather
ingredients :
500 gr - fresh shrimp
2 - onions
2 - stalks of celery
2 - carrots
3 - cloves garlic
1 - liter chicken or fish broth
1 - lemon
1 - tablespoon olive oil
Salt and pepper to taste
Fresh herbs for garnish (parsley or basil)
Method :
Preparation of ingredients. Peel the shrimp from the shell and separate the meat from the heads and tails. Reserve a few shrimp with heads and tails to garnish the soup
Preparing vegetables. Thinly slice the onions, carrots and celery. Finely chop the garlic
Roasting vegetables. Heat olive oil in a deep frying pan and sauté onion, carrots and celery until soft, about 5-7 minutes. Add garlic and sauté for another 1 minute
Preparation of broth. Heat the broth in a large saucepan. Add the roasted vegetables and simmer the soup over medium heat for about 15-20 minutes until the vegetables become soft and fragrant
Cooking shrimp. In a separate pan, heat the remaining oil and fry the shrimp until tender. This will take 2-3 minutes on each side until the shrimp are pink and tender
Connecting components. When the soup is ready, add the juice of half a lemon and pepper to taste. Stir and let the soup simmer for about 1 minute to combine all the ingredients
Serving. Scatter the fried shrimp throughout the soup and garnish with the heads and tails you saved. Sprinkle with fresh herbs and serve the soup hot
